Introducing Starward Projects Latest Whisky Release, Dolce

Fresh out of Melbourne's lockdown, the team at Starward launch a new Aussie whisky called Dolce.

Starward Dolce

Single Malt Whisky | 500ml | 48% ABV

Cask: Matured in Australian red wine barrels and finished in dessert wine barrels, that held Australian interpretation of a Sicilian Dessert Wine.

Announced today, a brand new release from Starward Projects, the Melbourne based distillery's experimental bottling range. Their newest release is called Dolce, Italian for sweet.  It’s a whisky unlike anything they’ve released before…

So how does it taste?

NOSE: Dried fruits, toasted marshmallows and marzipan.

PALATE: Initial sweetness on the front palate, rich dried fruits, brown sugar, cola and toasted marshmallows.

FINISH: Viscous, caramelised but enough tannin leaving a well-balanced finish. 

VERDICT: Intriguing marshmallow and cola characters melding with the Starward stamp of red wine barrel maturation, this is definitely a whisky you want to sip after dinner or matched with your favourite cheeseboard.

We caught up with Starward Founder David Vitale 

The Whisky List's Oliver asks "Exciting on the back of Melbourne being fresh out of lockdown, Starward releases your next Projects bottling. What was the inspiration for Dolce?"

Starward's David Vitale: "Coming from Sicilian origins myself, this is a whisky that is close to my heart, one that screamed right from the first tasting "TRY ME"! The sweet aromas of marshmallow and cola meld perfectly with our trademark juicy and balancing stamp of red wine barrel maturation."

Oliver: "Sounds delish. Always keen for a dessert wine post dinner, now we have it in whisky form. Anything you recommend to pair it with?"

David: "It is going to be the perfect end for our Christmas lunch with panettone and vanilla ice-cream."

Oliver: "Ah of course. Cheese platter instantly came to mind too. Lastly, when is this tasty number launching and price?

David: "Launches this Saturday 7th November, it's available to try at our Port Melbourne Distillery and also on our website. Be quick though, there's not many bottles."
