As part of their 10th Birthday celebrations, Cutler & Co. will launch a project whisky in collaboration with Port Melbourne distillery Starward. Throughout July, guests are invited to try this unique expression of Australian single malt whisky in the elegant front bar by the nip, in a cocktail and paired with a dish available exclusively on the Cutler & Co. Bar menu.
Leanne Altmann, Beverage Director for Andrew McConnell restaurants worked with Starward and the restaurant team to handpick a whisky to commemorate a decade of Cutler & Co. As a single barrel selection, only 250 bottles of this totally unique whisky will be available, never to be released again.
The team selected a barrel that had previously spent 40 years filled with McWilliams Apera, before being acquired by Starward to fully mature this very special dram. The oak ageing has contributed nutty, savoury characters to the sweet malty and tropical notes typical of Starward. The whisky has aromas of dried pear, ripe yellow peach and caramelised pineapple. Rich brown sugar, crème brûlée and banana bread notes are evident on the palate, with a savoury finish of almond, toast and warm spice.
Focussing on this distinctive flavour profile, Cutler & Co’s Bartender Ric Divola has created the Bread & Butter Manhattan ($26), exclusively available in the Bar during the month of July. To reflect the Cutler & Co. dining experience, Ric has used a technique known as fat-washing to incorporate flavours of Baker Bleu sourdough and house cultured butter into the cocktail, before the whisky is stirred down with Chinati Vergano Americano.
To accompany this special whisky, Cutler & Co’s Head Chef Colin Mainds has composed a dish that features ‘Le Tonneau’, a Swiss cow’s milk hard cheese that quite fittingly translates to ‘The Barrel’. The nutty cheese will be accompanied by cumquats candied in honey and the whisky, and housemade crackers made from the same malted barley that Starward use in their distillery.
This dish is available in the Cutler & Co. Bar for $22 throughout July.

With such complexity and natural balance, the cask strength of 56.5% abv provides a dry finish that encourages you to have another sip. The emergence of the Australian whisky scene is rightfully being celebrated globally, and we’re so excited to have collaborated on this project with a local distillery like Starward.”
During July, the whisky will be available for take home sales from the Cutler & Co. Bar and Marion for $150 (700mL).
