At 2pm today, Archie Rose Distilling Co. will launch the first of its long-awaited whiskies with the limited-edition release of 1,148 bottles of Chocolate Rye Malt Whisky, drawn from a single batch of eight casks, under the Archie Rose Concepts label, reserved for the rarest and most interesting releases. The only whisky of its kind in Australia, Chocolate Rye Malt Whisky uses choc rye, rye malt and barley malt yielding flavours of caraway, mint, shortbread, violets, hot chocolate and fruit jams.
This whisky is an insight into one of Archie Rose’s earliest explorations of heavily roasted malts, a key step in their journey towards embracing the more challenging, lower yielding, but far more flavourful world of roasted malts, and showcasing one of the key insights into how its Rye Malt Whisky came to be.
“It’s incredibly exciting to reveal our limited-edition Chocolate Rye Malt Whisky as our first whisky release and as an excellent insight into our long-term fascination, experimentation and dedication to malt”, says Archie Rose founder, Will Edwards.
“We are constantly searching for innovation and progression within what is a very traditional industry, currently designing and trialling our own yeast strains, refining our proprietary cask specifications, and growing our own, often heritage varieties of malt with our supply partners in Griffith, NSW; and so being able to share this spirit with Australian whisky fans, and demonstrate one key aspect of our R&D programme, being roasted malts, is just awesome.”
Australian re-shaved, toasted and charred Apera (Sherry) casks were utilised, adding notes of dried fruits and sultanas, which complement the biscuity, creamy and chocolate flavours from the spirit.
“Chocolate Rye Malt yield is really low – to put this in perspective, I’m talking fifteen times lower than a typical distillers malt” says Archie Rose Master Distiller, Dave Withers.
“Despite this inefficiency, and subsequently much higher cost, we use chocolate rye for its incredible flavour, as it adds fantastic accents of cocoa, cola and coffee.”
“For this release, the chocolate rye was used with restraint rather than making it too overt and overpowering, and was fermented with a combination of brewers’ and distillers’ yeasts, again reducing efficiency but maximising flavour,” Withers says.
