A rare single cask release from the Bakery Hill distillery in Melbourne’s Bayswater district that is now a complete sell out at their cellar door and online store. A big thanks to Andrew Baker, who answered our SOS for more stock and managed to find the very last two bottles “ever” hiding away at the distillery.
Nicknamed ‘A Wisp of Smoke’, it was distilled in 2008 and made using a very lightly peated malt (to approximately 5ppm) using New Zealand sourced peat as Victorian environmental laws forbid the burning of peat. It’s non-chill filtered and matured in American Oak ex-whiskey (Jack Daniels) barrels, then bottled without any additional colouring at 51.7%alc.

The limited release whisky was created using rare Belgian Peated barley, exhibiting fresh coastal peat flavours reminiscent of the finest Islay malts. Whilst the peat levels are much higher than the distilleries standard peated malt, it does not dominate the entire palate, the peat compliments the stunning array of elements at play.
The trademark sweetness of the Bakery Hill spirit is retained and with full maturation in American Oak ex-bourbon barrels, the complex and long-lasting finish is something to really behold.

The Bakery Hill Peated Malt ‘Cask Strength’ Whisky is made using imported, peated barley from the UK as Victorian environmental laws forbid the burning of peat. It’s non-chill filtered and matured in American Oak ex-whiskey (Jack Daniels) barrels, then bottled without any additional colouring, straight from the barrel at cask strength (60.2%alc) resulting in a strong and fruity malt with lots of spice.
