Extensive research has been conducted into discovering, locating and attaining the rare spirits for Evolve Spirits Bar’s collection. Museum-piece Tasmanian and world spirits are showcased, such as one-off bottlings of Glenfiddich and Balvenie whiskies, Glen Grant single malts from 1950, pre-phylloxera cognac dating over 100 years old, and often-unattainable Tasmanian releases from Tim Duckett’s Heartwood whisky and Sullivan’s Cove.

A Spirits Keep is a unique element; guests can purchase their own bottle of rare spirits and reserve it exclusively for their visits. While Evolve’s acute focus is on fine spirit tastings and built spirit beverages, a small selection of wines and beers are also offered on the menu.
