Recapturing the convivial spirit of Sydney’s formative years, The Doss House, one of Sydney’s newest whisky bars, is tucked into the sandstone depths of one of the city’s oldest suburbs, The Rocks. The rich, eclectic history of some of its former tenants including a bootmaker, boarding house and opium dealer, are entwined within the interiors of each of the five, cosy bar spaces, resulting in a venue steeped in character and ambiance.
Through the use of rich American oak, brass fittings, custom leather seating, luxury fabrics along with soft lighting to highlight the original features, the 170-year-old sandstone walls of The Doss House have been given a new lease of life. Each of the five chambers of this inimitable venue has its own tale and design cues, weaving the past into the present.
The whiskies take centre stage at this unique basement bar, with the collection sitting at about 200. Australia, Scotland, Ireland, Japanese and America are all represented with the more premium bottles encased in bespoke oak cabinets throughout the venue.
